December? Bring on the… **Candy Cane Dip**

December has snuck up on me this year. I’m guessing this is due to my BFF from high school not sending me my annual candy canes for my birthday. She usually sends me the first box of *Candy Canes* that she sees because she thinks of me- and it’s usually around the time of my birthday. I guess since I am married, have a job, and am old enough to buy my own candy canes, she decided she’d save some money on shipping and have me dip into my own savings and buy a box 😉

Also, it is the first Friday in December, meaning I have contribute to the teacher’s lounge to help celebrate the birthday’s that are in December. I have expressed this dilemma to you all before. The teacher’s lounge dilemma. …..Apparently I’m a fan of bringing dips to the teachers lounge. They will never see this healthyness coming! The snickerdoodle dip was a *HUGE* success! I wrote out the snickerdoodle recipe more times than I care to admit, a couple of the teachers were in love!

I decided to get all sorts of festive on the teacher’s lounge!  So, I made this candy cane dip to be served with gram crackers, apple slices, or a thin chocolate wafer!

♥Candy Cane Dip♥

  • 1 can of white beans (rinsed & drained!!!)
  • 1/3 c. unsweetened applesauce- I probably put in a little more for bulk, I like a lot of food!
  • Sweetener of choice- I used 3-4 packets of Stevia
  • 1/3 tsp baking soda
  • 1.5 tsp vanilla
  • 1 tsp peppermint extract- plus more for me, I like the peppermint to knock me out of my seat!
  • 1/4 tsp salt
  • 1 tsp Xanthan gum for thickening

…I have one friend, *cough, cough –you know who you are, cough cough* who will freak out when seeing the ingredient list. She thinks it is out of the box- in a bad way. DoNOT knock it till you try it! Do you hear me?!?!

What you'll need for CANDY CANE DIP!

Put all of the ingredients, except xanthan gum, into a food processor and let it blend things together for quite awhile. You don’t want a single chunk. Then, add the xanthan gum and allow it to process for about 45 seconds- 1 minute until the mixture is smooth and no longer runny. Put into dish. Cool/let stand in refridgerator (optional). Enjoy!

Ways to enjoy:

  • On a spoon (or finger, I won’t judge!)
  • On a gram cracker
  • On some sort of fruit
  • On a thin chocolate wafer
  • ANYTHING ese your little heart desires!
